Wandering Lights is our blended saison bursting with notes of ripe passionfruit, guava, orange rind, and lemon-lime Gatorade. Its moderately dry with a bright, soft texture. Wandering Lights is conditioned in the bottle with live yeast, so please refrigerate for at least 24 hours before delicately pouring into a glass, leaving behind the yeast in the bottom of the bottle.
How we make it: Wandering Lights is a blend of (mostly) fresh, hoppy saison and barrel-aged saison. For this batch, we used a barrel of 2-year-old saison that was super dry and oaky with orange peel and lemon/lime vibes. The fresh portion (about 75% of the blend) was “No Matter How Far” saison. The blend was dryhopped, fermented further with our house culture, then bottled and conditioned for another 2 months before release.
